Pineapple Korean BBQ Chicken

The other night I decided to try something completely new and found a recipe for Pineapple Dak Bulgogi (Pineapple Korean BBQ chicken).  I got the recipe from one of the first foodie blogs I ever followed – Closet Cooking, where Kevin Lynch provides new cooking ideas and outstanding recipes.  The flavor and the spices of the Bulgogi are right up my alley.  Sweet and spicy and can be served in lots of different ways.  The traditional way to serve it is over rice, but there’s a ton of different things you can do with it, be creative.

Pineapple Dak Bulgogi (Pineapple Korean BBQ Chicken)

(makes 4 servings)

Ingredients:
1 pound chicken breast (thinly sliced)
1/2 cup gochujang
5 cloves garlic (grated)
1 inch ginger (grated)
1 small onion (grated)
1 cup pineapple pieces & their juice
1/2 cup soy sauce
1 tablespoon sesame oil
1 tablespoon brown sugar
2 green onions (chopped)
1/4 teaspoon pepper
1 tablespoon sesame seeds (toasted and crushed)

** My addition to the recipe was to add the juice from Mandarin Oranges, it added another touch of sweetness and really completed the meal.

Directions:
1. Mix everything in a freezer bag and marinate for an hour.
2. Grill, saute or stir fry the chicken and pineapple pieces until cooked.

Tip: Place the chicken breasts in the freezer for an hour or two to stiffen them up a bit and they will be much easier to slice thinly.

The next day I had lots of leftovers, so I used the Pineapple Dak Bulgogi to make a Quesadilla with sliced Jalepenos and a combination of cheddar and jack cheese.
For dipping sauce, I mixed sour cream with about half a tablespoon of gochujang.  This was a great recipe and I look forward to cooking the meal again.
